Vegetable Chowder

  

INGREDIENTS (serves 4)

 

15ml oil

1 large onion, finely chopped

225g potatoes, finely diced

225g carrots, finely diced

3 celery sticks, finely diced

400g can chopped tomatoes

115g macaroni

425ml vegetable stock

1 bay leaf

10ml dried oregano

300ml milk

salt and pepper

Chopped fresh parsley to garnish

 

DIRECTIONS

 

  1. Heat the oil in a large saucepan.
  2. Add the onion, potatoes carrots and celery and sauté for five minutes, stirring occasionally.  
  3. Add the tomatoes, pasta, stock and herbs.
  4. Bring to the boil, reduce the heat, cover and simmer for 15 mins.
  5. Stir in the milk and season to taste.
  6. Bring back to the boil and then discard the bay leaf.
