Spiced Almonds


INGREDIENTS (Serves 6)


Vegetable oil for greasing

200g whole blanched almonds

1 egg white, lightly whisked

100g caster sugar

½ tsp sea salt

1 tsp cumin

1 tsp paprika

½ tsp crushed chilies


DIRECTIONS


  1. Preheat the oven to 170 C or gas mark 3.
  2. Line a baking tray with foil and brush lightly with vegetable oil.
  3. Toss the almonds in the egg white.
  4. Add the remaining ingredients and mix well.
  5. Spread the nuts on the tray in one layer.
  6. Bake for 20-25 minutes, stirring halfway through.
  7. Leave to cool before serving.
