Simnel Cake
This spiced fruit cake has a layer of marzipan in the centre & another on top. Originally, the cake was baked by girls in service to take home with them on Mothering Sunday. It is now more usual to have this cake at Easter with 11 marzipan eggs on top to represent the Apostles except for Judas.
INGREDIENTS
8oz flour
Pinch of salt
1 tsp cinnamon
12oz currants
4oz sultanas
3oz mixed peel
6oz butter
6oz caster sugar
3 eggs
Milk to mix
1lb marzipan
DIRECTIONS
1. Grease & line an 8 inch cake tin. Roll out a third of the marzipan into a round to fit the cake tin.
2. Sieve dry ingredients, add fruit & peel.
3. Cream fat & sugar beat in eggs, one at a time.
4. Stir in dry ingredients adding milk to give a dropping consistency.
5. Put half the mix into the cake tin smooth the top & cover with the marzipan. Put the rest of the mix on the top.
6. Bake in a low oven (325 degree F. or Gas Mark 2) for about 3 hours. Test by putting a skewer in cake and if it comes out clean the cake is ready. Cool on a rack.
7. Cover top of cake with a round of marzipan & decorate with 11 small balls of marzipan, brush with egg white & brown under the grill.
