Sausage Onion and Tomato Tart

 

INGREDIENTS (Serves 8-12)

 

300g short crust pastry

2 tbsp sun flour oil

6 sausages (veggie if preferred)

2 medium onions sliced into rings

100g chopped mushrooms

400g tin chopped tomatoes (drained)

2 tsp mixed herbs

Salt and black pepper

 

DIRECTIONS

 

  1. Chop the sausages into thick pieces
  2. Heat oil in a pan and add the sausages, frying for a few minutes turning them frequently until cooked through
  3. Remove from the pan.  
  4. Gently cook the onions in the same pan until caramelised
  5. Add the mushrooms and the herbs and cook until golden brown
  6. Remove from heat then add tomatoes, sausages and seasoning
  7. Mix through gently
  8. Preheat the oven to 190C gas mk5
  9. Grease a 10inch flan dish
  10. Roll the pastry out on a floured surface into a large circle 2-3 inches bigger than the flan dish
  11. Lift the pastry gently and place into the dish, easing the pastry down inside the dish
  12. Trim the edges, spoon the filling into the pastry case and level the top
  13. Bake in the centre of the oven for 30 mins
