Sausage Onion and Tomato Tart
INGREDIENTS (Serves 8-12)
300g short crust pastry
2 tbsp sun flour oil
6 sausages (veggie if preferred)
2 medium onions sliced into rings
100g chopped mushrooms
400g tin chopped tomatoes (drained)
2 tsp mixed herbs
Salt and black pepper
DIRECTIONS
- Chop the sausages into thick pieces
- Heat oil in a pan and add the sausages, frying for a few minutes turning them frequently
until cooked through
- Remove from the pan.
- Gently cook the onions in the same pan until caramelised
- Add the mushrooms and the herbs and cook until golden brown
- Remove from heat then add tomatoes, sausages and seasoning
- Mix through gently
- Preheat the oven to 190C gas mk5
- Grease a 10inch flan dish
- Roll the pastry out on a floured surface into a large circle 2-3 inches bigger than
the flan dish
- Lift the pastry gently and place into the dish, easing the pastry down inside the
dish
- Trim the edges, spoon the filling into the pastry case and level the top
- Bake in the centre of the oven for 30 mins
