Salmon and Broccoli Pastry Slice
INGREDIENTS (Serves 4)
4 salmon fillets
250ml milk
Bay leaf
25g butter
25g plain flour
200g broccoli, steamed and cut into small pieces
500g puff pastry
1 egg beaten
DIRECTIONS
- Preheat oven 220C gas mk7
- Poach the fish in the milk with the bay leaf for 10 mins, flake the fish and reserve
the milk
- Melt butter in pan and stir in the flour, whisk in the milk and bring to boil while
whisking
- Mix with salmon and broccoli, season and leave to cool
- Roll out the pasty on a floured surface into an oblong
- Lay on a baking tray and put the salmon mixture on one long side
- Brush the edges with egg, fold over and press the edges firmly together
- Cut 3-4 slashes on the top of the pie, brush the top with egg and bake for 25-35
mins.
- Serve with lemon wedges, new potatoes and a green salad.
