Salmon and Broccoli Pastry Slice

 

INGREDIENTS (Serves 4)

 

4 salmon fillets

250ml milk

Bay leaf

25g butter

25g plain flour

200g broccoli, steamed and cut into small pieces

500g puff pastry

1 egg beaten

 

DIRECTIONS

 

  1. Preheat oven 220C gas mk7
  2. Poach the fish in the milk with the bay leaf for 10 mins, flake the fish and reserve the milk
  3. Melt butter in pan and stir in the flour, whisk in the milk and bring to boil while whisking
  4. Mix with salmon and broccoli, season and leave to cool
  5. Roll out the pasty on a floured surface into an oblong
  6. Lay on a baking tray and put the salmon mixture on one long side
  7. Brush the edges with egg, fold over and press the edges firmly together
  8. Cut 3-4 slashes on the top of the pie, brush the top with egg and bake for 25-35 mins.
  9. Serve with lemon wedges, new potatoes and a green salad.
