Rhubarb and Apple Crumble

 

INGREDIENTS (Serves 8)

 

125g plain flour

50g crushed ginger biscuits

25g porridge oats

100g butter, plus extra for greasing

3tbsps light brown sugar

500g rhubarb, chopped

2tbsps preserved ginger, chopped

2tbsps ginger syrup from jar

50g caster sugar

4tbsps water

375g dessert apples, peeled, cored and sliced

 

DIRECTIONS

 

  1. Sift flour into a bowl, stir in biscuits and oats.
  2. Rub in the butter until mixture resembles breadcrumbs, stir in brown sugar.
  3. Place rhubarb in pan with ginger, syrup, caster sugar and water.
  4. Heat gently, covered and simmer for 10 minutes.
  5. Place apples in a greased dish.
  6. Add rhubarb mixture and sprinkle over crumble topping.
  7. Place in a pre-heated oven, 190 or gas mark 5, for 40 minutes until the filling is bubbling and the topping is golden.
