Pumpkin Pancakes

 

 

INGREDIENTS (Makes 12)

 

250g pumpkin flesh

25g sugar

2 eggs

50g self-raising flour

pinch of ground allspice

oil for frying

 

DIRECTIONS

 

  1. Cut the pumpkin into even-sized pieces and cook in boiling salted water for about 15 minutes until tender.
  2. Drain thoroughly and transfer to a blender or food processor.
  3. Add the sugar, egg, flour and allspice and work to a smooth puree.
  4. Heat a little oil in a frying pan until smoking.
  5. Add spoonfuls of the pumpkin mixture, spacing them a little apart and fry over a moderate heat until golden.
  6. Turn and cook the other side.
  7. Drain on absorbent kitchen paper.
  8. Repeat until all the mixture is used.

 

Serve warm, with honey.
