Pasta with Asparagus

 

Serves 4.

 

INGREDIENTS

 

400 g farfalle

salt and freshly ground black pepper

450 g asparagus, trimmed and cut into 2.5cm lengths

200 g fromage frais

grated rind of half a lemon

 

 

DIRECTIONS

 

  1. Bring a large saucepan of water to the boil and add a salt to taste. Add the pasta, let the water come back to the boil, give it a quick stir, then leave to cook for 4 minutes.
  2. Add the asparagus and cook for a further 3-4 minutes, until both the pasta and asparagus are just tender. Drain the pasta and asparagus, then tip them back into the pan and add the fromage frais and lemon rind.
  3. Season to taste and serve immediately.
