Pasta with Asparagus
Serves 4.
INGREDIENTS
400 g farfalle
salt and freshly ground black pepper
450 g asparagus, trimmed and cut into 2.5cm lengths
200 g fromage frais
grated rind of half a lemon
DIRECTIONS
- Bring a large saucepan of water to the boil and add a salt to taste. Add the pasta,
let the water come back to the boil, give it a quick stir, then leave to cook for
4 minutes.
- Add the asparagus and cook for a further 3-4 minutes, until both the pasta and asparagus
are just tender. Drain the pasta and asparagus, then tip them back into the pan and
add the fromage frais and lemon rind.
- Season to taste and serve immediately.
