New Potatoes and Spinach
INGREDIENTS (Serves 4)
750g New potatoes
15 ml Olive oil
2 cloves Chopped garlic
300-400g Baby spinach
½ lemon for seasoning
4 eggs poached (optional)
DIRECTIONS
- Wash potatoes and halve them, boil until soft
- Sauté the potatoes in oil until lightly browned
- Poach the eggs at same time as sautéing (if using)
- Wash and dry the spinach then add to potatoes
- Add the garlic
- Stir until the spinach is wilted
- Squeeze over lemon juice to taste and season
Serve as a starter or as main with the poached egg.
