New Potatoes and Spinach

 

INGREDIENTS (Serves 4)

 

750g New potatoes

15 ml Olive oil

2 cloves Chopped garlic

300-400g Baby spinach

½ lemon for seasoning

4 eggs poached (optional)

 

DIRECTIONS

 

  1. Wash potatoes and halve them, boil until soft
  2. Sauté the potatoes in oil until lightly browned
  3. Poach the eggs at same time as sautéing (if using)
  4. Wash and dry the spinach then add to potatoes
  5. Add the garlic
  6. Stir until the spinach is wilted
  7. Squeeze over lemon juice to taste and season

 

Serve as a starter or as main with the poached egg.
