Hearty Winter Soup


INGREDIENTS (Serves 4)


575 ml veg stock

1 potato, diced

1 onion, diced

1 large carrot, diced

1 tomato, skinned and chopped roughly

1 turnip or ½ swede, diced

1 small parsnip, diced

1 tablespoon tomato puree

2 tablespoons chopped fresh parsley

Salt and pepper

   


DIRECTIONS


  1. Put stock into a large saucepan and bring to the boil
  2. Add the vegetables together with the tomato puree and stir
  3. When just at the boil, reduce the heat, cover and simmer for 30 mins or until vegetables are tender
  4. Stir in most of the parsley and add seasoning
  5. Serve the soup hot and sprinkle with the rest of the parsley
