Easy Strawberry Jam


INGREDIENTS (Makes approx 4 kg)


2Kg strawberries rinsed and holed

2Kg jam sugar

½ vanilla pod (optional)

Juice of 2 lemons


DIRECTIONS


  1. Put the strawberries and sugar into a large bowl and mix
  2. Leave overnight with the vanilla pod, if using (the sugar will draw the juice from the berries)
  3. Remove the vanilla pod and tip the berry mixture into a preserving pan
  4. Add the lemon juice and leave over a low heat for the sugar to dissolve completely
  5. When dissolved turn up the heat and boil for 5 minutes
  6. Meanwhile chill small plates in the fridge
  7. Turn off the heat under the pan, drop some jam onto the chilled plate and leave until cold.  Push your finger through the jam and if it wrinkles the jam is ready to pot, if not, boil for 2-3 mins more and test again, keep testing until ready
  8. Skim off any foamy sediment, then allow jam to settle for an hour this will allow better distribution of fruit when in the jars
  9. Pot into sterilised jars, while jars are still hot and dry
  10. The best way to sterilise jars is to wash them and the lids in hot soapy water, rinse in very hot water and then dry them in the oven at 170C or gas mk3 for 10-20 mins while the jam cooks
  11. The jam will last for a year although the colour will darken over time, once opened, store in the fridge
