Devilled Mackerel

 

INGREDIENTS (Serves 4)

 

4 Mackerel gutted

25g butter

½ tsp Cayenne

1 tsp Paprika

1tsp English mustard

1tsp brown sugar

1 tbsp Balsamic vinegar

 

DIRECTIONS

 

  1. Pre heat oven to 200C or gas mark 6
  2. Cut 3 or 4 diagonal slashes on one side of the Mackerel, put in oven proof dish/baking tray large enough to hold the fish in a single layer cut side up
  3. Mix the butter with Cayenne, Paprika, mustard sugar and vinegar
  4. Spread a little in the slashes on the Mackerel and put the rest inside the fish
  5. Bake for 20 mins or until cooked.

 

Serve with lemon wedges, new potatoes and a green salad.
