Creamy Potato Gratin with Herbs


INGREDIENTS (Serves 4)


675g potatoes cut into matchstick sized pieces

25g butter

1 onion, chopped

1 garlic clove, crushed

2 eggs

300ml crème fraiche or double cream

115g Gruyere cheese, grated

60ml fresh mixed herbs, chopped

Freshly grated nutmeg

Salt and pepper


DIRECTIONS


  1. Place a baking sheet in the oven and preheat to 180 C or gas mark 5.
  2. Melt the butter in a pan, fry the onion and garlic until softened.
  3. Whisk together the eggs crème fraiche or cream and half the cheese.
  4. Stir in the onion mixture, herbs, potatoes, nutmeg, salt and pepper.
  5. Spoon the mixture into a buttered dish ovenproof dish and sprinkle over the remaining cheese.
  6. Bake on the hot baking sheet for 50-60 minutes, until golden brown
