Creamy Potato Gratin with Herbs
INGREDIENTS (Serves 4)
675g potatoes cut into matchstick sized pieces
25g butter
1 onion, chopped
1 garlic clove, crushed
2 eggs
300ml crème fraiche or double cream
115g Gruyere cheese, grated
60ml fresh mixed herbs, chopped
Freshly grated nutmeg
Salt and pepper
DIRECTIONS
- Place a baking sheet in the oven and preheat to 180 C or gas mark 5.
- Melt the butter in a pan, fry the onion and garlic until softened.
- Whisk together the eggs crème fraiche or cream and half the cheese.
- Stir in the onion mixture, herbs, potatoes, nutmeg, salt and pepper.
- Spoon the mixture into a buttered dish ovenproof dish and sprinkle over the remaining
cheese.
- Bake on the hot baking sheet for 50-60 minutes, until golden brown
