Cranberry Nut Bread
INGREDIENTS (Serves 10 slices)
200g sifted plane flour
200g sugar
1½ tsp baking powder
½ tsp baking soda
½ tsp salt
1 egg lightly beaten
Juice and grated rind of 1 orange
30g butter
160ml boiling water
150g chopped fresh cranberries
150g chopped nuts pecan or walnut
DIRECTIONS
- Preheat the oven to 180C gas mk 4
- Butter a 200x400mm loaf tin
- Sift together the flour, sugar, baking powder, baking soda and salt
- Blend in the egg
- Combine the orange juice, peel, butter and boiling water and mix into the flour mixture
- Add the nuts and cranberries and mix until well blended
- Turn the batter into the loaf tin and bake for 1 hr or until skewer comes out clean.
The top will crack while baking
- Cool in the tin for 5 mins then turn out and finish cooling on a wire rack.
