Cranberry Nut Bread


INGREDIENTS (Serves 10 slices)


200g sifted plane flour

200g sugar

1½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 egg lightly beaten

Juice and grated rind of 1 orange

30g butter

160ml boiling water

150g chopped fresh cranberries

150g chopped nuts pecan or walnut


DIRECTIONS


  1. Preheat the oven to 180C gas mk 4
  2. Butter a 200x400mm loaf tin
  3. Sift together the flour, sugar, baking powder, baking soda and salt
  4. Blend in the egg
  5. Combine the orange juice, peel, butter and boiling water and mix into the flour mixture
  6. Add the nuts and cranberries and mix until well blended
  7. Turn the batter into the loaf tin and bake for 1 hr or until skewer comes out clean.  The top will crack while baking
  8. Cool in the tin for 5 mins then turn out and finish cooling on a wire rack.
