Courgette & Dolcelatte Picnic Tortilla
INGREDIENTS (Serves 4)
250g new potatoes, washed & sliced
2 courgettes, trimmed & thickly sliced (approx. 200g)
5 eggs
Garlic clove, finely chopped
2 tbsp chives, snipped
1tbsp olive oil
85g dolcelatte, broken into pieces
DIRECTIONS
- Bring a pan of water to the boil & drop in potato slices.
- Return to the boil & cook for 2 mins.
- Add courgettes, cook 2 mins more & drain into a colander - The vegetables should
still be firm.
- Turn on the grill.
- Beat the eggs with the garlic, chives & seasoning.
- Tip in the vegetables & stir to coat.
- Heat the oil in a frying pan, pour in the egg mixture & sprinkle over the cheese.
- Cook gently for 5 mins or until the bottom is set.
- Place under the grill & cook the top until set & golden.
- Serve warm or cold, cut into wedges with tomatoes, bread & olives.
