Courgette & Dolcelatte Picnic Tortilla


INGREDIENTS (Serves 4)


250g new potatoes, washed & sliced

2 courgettes, trimmed & thickly sliced (approx. 200g)

5 eggs

Garlic clove, finely chopped

2 tbsp chives, snipped

1tbsp olive oil

85g dolcelatte, broken into pieces


DIRECTIONS


  1. Bring a pan of water to the boil & drop in potato slices.
  2. Return to the boil & cook for 2 mins.
  3. Add courgettes, cook 2 mins more & drain into a colander - The vegetables should still be firm.
  4. Turn on the grill.
  5. Beat the eggs with the garlic, chives & seasoning.
  6. Tip in the vegetables & stir to coat.
  7. Heat the oil in a frying pan, pour in the egg mixture & sprinkle over the cheese.
  8. Cook gently for 5 mins or until the bottom is set.
  9. Place under the grill & cook the top until set & golden.
  10. Serve warm or cold, cut into wedges with tomatoes, bread & olives.
