Christmas Cake


INGREDIENTS


675g mixed dried fruit

85g. glace cherries, halved

50g.ground almonds

5 tablespoons rum

1 orange, grated zest and juice

150g. butter, softened

150g. soft brown sugar

3 eggs

sieve 175g.self raising flour and 1 teaspoon mixed spice


DIRECTIONS


  1.  Grease and line 20cm.round cake tin.
  2. In a bowl place the dried fruit, cherries, rum, juice and zest, stir well, cover and leave overnight.
  3. Cream the butter and sugar until soft. Beat in the eggs, and then stir in the flour, mixed spice and ground almonds until well mixed.
  4. Gradually stir in the fruit mixture until it is thoroughly mixed.
  5. Place in the cake tin and smooth the top.
  6. Bake at Gas Mark 1, electric oven 140 degrees C.or fan oven 120 degrees C. for 2½-3hours until dark golden and firm to the touch and a skewer inserted into the centre comes out clean.
  7. Leave cake in the tin for at least 30 minutes before removing and leaving to cool completely on a wire rack.
  8. Decorate with icing and marzipan to finish.
