Christmas Cake
INGREDIENTS
675g mixed dried fruit
85g. glace cherries, halved
50g.ground almonds
5 tablespoons rum
1 orange, grated zest and juice
150g. butter, softened
150g. soft brown sugar
3 eggs
sieve 175g.self raising flour and 1 teaspoon mixed spice
DIRECTIONS
- Grease and line 20cm.round cake tin.
- In a bowl place the dried fruit, cherries, rum, juice and zest, stir well, cover
and leave overnight.
- Cream the butter and sugar until soft. Beat in the eggs, and then stir in the flour,
mixed spice and ground almonds until well mixed.
- Gradually stir in the fruit mixture until it is thoroughly mixed.
- Place in the cake tin and smooth the top.
- Bake at Gas Mark 1, electric oven 140 degrees C.or fan oven 120 degrees C. for 2½-3hours
until dark golden and firm to the touch and a skewer inserted into the centre comes
out clean.
- Leave cake in the tin for at least 30 minutes before removing and leaving to cool
completely on a wire rack.
- Decorate with icing and marzipan to finish.
