Chocolate Snow Cake
INGREDIENTS (Serves 8-10)
6 eggs
350g self-raising flour
350g castor sugar
350g softened butter
3 tsp baking powder
85g sifted cocoa powder
8 tbsp boiling water
300ml whipping cream
Icing sugar to sprinkle
Glace fruit for decoration
DIRECTIONS
- Preheat the oven to 180C gas mark 4
- Grease and line 4 18cm sandwich tins
- Place the eggs, flour, sugar and butter in a large mixing bowl and beat until smooth
- Mix together the cocoa powder and boiling water to form a paste and mix into the
egg mixture
- Divide the mixture between the 4 tins and level the tops
- Bake for 20-25 mins until the cakes feel springy to the touch and shrink away from
the sides of the tin
- Cool the cakes in the tins, turn on to a wire rack and allow to go cold
- Whip the cream and spread a thin layer over the top of 3 cakes
- Sandwich together topping with the fourth cake and spread the remaining cream on
the top layer
- Sprinkle with icing sugar and decorate with glace fruits
