Chocolate Cake with Chocolate Icing
INGREDIENTS (Serves 6-8)
340g self raising flour
½ tsp baking powder
Pinch of salt
225g softened butter
110g vegetable fat
340g sugar
1tsp vanilla essence
5 eggs
250ml milk
For icing
25g cocoa powder
25g vegetable marge
250g icing sugar
6 tbsp milk
1 tsp vanilla essence
Plain chocolate crumbled for decoration
DIRECTIONS
- Pre heat oven to 165C gas mark 3
- Grease and flour 25cm flan ring
- Sift flour baking powder and salt
- In a large bowl cream the butter, the vegetable fat, sugar and vanilla until light
and fluffy. Add eggs one at a time beating well
- Add flour mixture alternatively with the milk and mix well
- Pour into the flan ring, bake for 70 mins and test with skewer, if it comes out clean
the cake is done
- Allow to cool for 10 mins in the tin, turn onto a wire rack and cool completely
- To make icing, melt margarine then add cocoa, simmer for 2 mins over very low heat
- Remove from heat, add 2 tbsp milk and begin to sieve in the icing sugar and stir.
Continue to add the icing sugar and add more milk as necessary
- Stir in the Vanilla essence and spread onto cake.
Sprinkle with crumbed chocolate.
