Chocolate Cake with Chocolate Icing


INGREDIENTS (Serves 6-8)


340g self raising flour

½ tsp baking powder

Pinch of salt

225g softened butter

110g vegetable fat

340g sugar

1tsp vanilla essence

5 eggs

250ml milk


For icing

25g cocoa powder

25g vegetable marge

250g icing sugar

6 tbsp milk

1 tsp vanilla essence

Plain chocolate crumbled for decoration

   


DIRECTIONS


  1. Pre heat oven to 165C gas mark 3
  2. Grease and flour 25cm flan ring
  3. Sift flour baking powder and salt
  4. In a large bowl cream the butter, the vegetable fat, sugar and vanilla until light and fluffy.  Add eggs one at a time beating well
  5. Add flour mixture alternatively with the milk and mix well
  6. Pour into the flan ring, bake for 70 mins and test with skewer, if it comes out clean the cake is done
  7. Allow to cool for 10 mins in the tin, turn onto a wire rack and cool completely


  1. To make icing, melt margarine then add cocoa, simmer for 2 mins over very low heat
  2. Remove from heat, add 2 tbsp milk and begin to sieve in the icing sugar and stir.  Continue to add the icing sugar and add more milk as necessary
  3. Stir in the Vanilla essence and spread onto cake.


Sprinkle with crumbed chocolate.
