Banana Pancakes with Blueberry Syrup


INGREDIENTS (Serves 4)


200g delf raising flour

2 tbsp castor sugar

1tsp baking powder

1 tbsp sunflower oil, plus extra for greasing

300ml milk

1 large egg

1 large banana sliced

200g of blue berries

3-4 tbsp golden syrup

Toasted pecans cut into slivers


DIRECTIONS


  1. Mix the flour, sugar and baking powder in a bowl
  2. Beat the oil milk and eggs together, then stir in the dried ingredients with the bananas
  3. Put some oil on a paper towel and use it to rub the base of a non-stick frying pan
  4. Heat the pan, drop in tablespoons of the batter spaced well apart
  5. Cook until bubbles start to appear in the batter
  6. Carefully turn the pancakes over and cook the other side
  7. Cook the pancakes in batches, about 12c pancakes can be made.
  8. You will need to wipe the pan a couple of times with the oil paper, when cooking
  9. Meanwhile, out the remaining blue berries in a pan with the syrup and briefly heat to soften
  10. Place a stack of 3 pancakes on a plate with a few blue berries between each one
  11. Top with a final few blueberries, drizzle with extra syrup if you like, scatter some pecans on the top and serve.
