Banana Pancakes with Blueberry Syrup
INGREDIENTS (Serves 4)
200g delf raising flour
2 tbsp castor sugar
1tsp baking powder
1 tbsp sunflower oil, plus extra for greasing
300ml milk
1 large egg
1 large banana sliced
200g of blue berries
3-4 tbsp golden syrup
Toasted pecans cut into slivers
DIRECTIONS
- Mix the flour, sugar and baking powder in a bowl
- Beat the oil milk and eggs together, then stir in the dried ingredients with the
bananas
- Put some oil on a paper towel and use it to rub the base of a non-stick frying pan
- Heat the pan, drop in tablespoons of the batter spaced well apart
- Cook until bubbles start to appear in the batter
- Carefully turn the pancakes over and cook the other side
- Cook the pancakes in batches, about 12c pancakes can be made.
- You will need to wipe the pan a couple of times with the oil paper, when cooking
- Meanwhile, out the remaining blue berries in a pan with the syrup and briefly heat
to soften
- Place a stack of 3 pancakes on a plate with a few blue berries between each one
- Top with a final few blueberries, drizzle with extra syrup if you like, scatter some
pecans on the top and serve.
