Apple Nut Cake with honey cream cheese frosting
INGREDIENTS (Serves 12)
3 large eggs
135g light brown sugar
2 tsp vanilla extract
180ml of honey
180ml vegetable oil
300g plain flour
1tsp baking powder
1tsp baking soda
2 tsp cinnamon
½ tsp salt
450g apples, peeled cored and diced
150g of broken walnuts
150g dried diced apricots
Honey cream cheese frosting
430g cream cheese softened
80ml honey
2 tsp vanilla extract
75g finely chopped walnuts
DIRECTIONS
- Heat the oven to 180C gas mk4
- Lightly grease a 230X300mm cake tin
- In a large bowl using an electric mixer beat eggs sugar and vanilla for 5 mins
- Slowly beat in the honey and oil until well blended
- In a separate bowl stir flour, baking powder, baking soda, cinnamon and salt together
- Add flour mixture apples, walnuts and apricots to the egg mixture
- Fold together until blended
- Poor into the prepared tin and bake for 35 mins or until the top is set
- Cool in the tin
- Beat the cream cheese honey and vanilla until light and fluffy
- Chill until stiff enough to spread and smooth over the cake and sprinkle with the
chopped walnuts
- Cut into squares to serve.
