Apple Nut Cake with honey cream cheese frosting


INGREDIENTS (Serves 12)


3 large eggs

135g light brown sugar

2 tsp vanilla extract

180ml of honey

180ml vegetable oil

300g plain flour

1tsp baking powder

1tsp baking soda

2 tsp cinnamon

½  tsp salt

450g apples, peeled cored and diced

150g of broken walnuts

150g dried diced apricots


Honey cream cheese frosting

430g cream cheese softened

80ml honey

2 tsp vanilla extract

75g finely chopped walnuts


DIRECTIONS


  1. Heat the oven to 180C gas mk4
  2. Lightly grease a 230X300mm cake tin
  3. In a large bowl using an electric mixer beat eggs sugar and vanilla for 5 mins
  4. Slowly beat in the honey and oil until well blended
  5. In a separate bowl stir flour, baking powder, baking soda, cinnamon and salt together
  6. Add flour mixture apples, walnuts and apricots to the egg mixture
  7. Fold together until blended
  8. Poor into the prepared tin and bake for 35 mins or until the top is set
  9. Cool in the tin
  10. Beat the cream cheese honey and vanilla until light and fluffy
  11. Chill until stiff enough to spread and smooth over the cake and sprinkle with the chopped walnuts
  12. Cut into squares to serve.
