Apple, Date & Walnut Pudding

 

INGREDIENTS

 

125g self raising flour

1 teaspoon cinnamon

1 teaspoon baking powder

100g caster sugar

45ml milk

3 medium eggs, separated

625g cooking apples, peeled, cored & cut into chunks

50g dates, cut into small pieces

25g walnut pieces

 

DIRECTIONS

 

  1. Preheat the oven to gas Mark 5, electric oven 190 degrees C. or fan oven 170 degrees C.
  2. Sift the flour, cinnamon & baking powder into a bowl & stir in the caster sugar. Whisk the oil, milk & egg yolks together & pour over the flour mixture. Beat until smooth.
  3. Whisk the egg whites until they are stiff.
  4. Fold a spoonful into the mixture to loosen it & then gently fold in the remainder, followed by the apples, dates & walnuts.
  5. Spoon into a greased 23cm flan or gratin dish, level the surface & bake in the oven for about 40 minutes, until golden brown and firm to touch. You may need to cover the top loosely with foil if it browns too quickly.
  6. Serve warm, with custard or cream.
