Apple, Date & Walnut Pudding
INGREDIENTS
125g self raising flour
1 teaspoon cinnamon
1 teaspoon baking powder
100g caster sugar
45ml milk
3 medium eggs, separated
625g cooking apples, peeled, cored & cut into chunks
50g dates, cut into small pieces
25g walnut pieces
DIRECTIONS
- Preheat the oven to gas Mark 5, electric oven 190 degrees C. or fan oven 170 degrees
C.
- Sift the flour, cinnamon & baking powder into a bowl & stir in the caster sugar.
Whisk the oil, milk & egg yolks together & pour over the flour mixture. Beat until
smooth.
- Whisk the egg whites until they are stiff.
- Fold a spoonful into the mixture to loosen it & then gently fold in the remainder,
followed by the apples, dates & walnuts.
- Spoon into a greased 23cm flan or gratin dish, level the surface & bake in the oven
for about 40 minutes, until golden brown and firm to touch. You may need to cover
the top loosely with foil if it browns too quickly.
- Serve warm, with custard or cream.
