Aloo Gobi
INGREDIENTS (Serves 6)
2 tablespoons vegetable oil
1 onion, chopped
2 teaspoons cumin seeds, crushed
2 cloves garlic, sliced
350g. cauliflower florets
½ teaspoon ground turmeric
150g.fresh spinach leaves
DIRECTIONS
- Heat the oil in a large frying pan; add the onion and sauté for 4 minutes or until
tender.
- Add the garlic, cauliflower, cumin seeds and turmeric. Then sauté for 1 minute.
- Add 200ml. water, cover and simmer for 5 minutes or until the cauliflower is tender.
- Add the spinach, stir well and simmer for a further 2 minutes or until tender and
wilted.
- Season to taste and serve.
