Aloo Gobi

 

INGREDIENTS (Serves 6)

 

2 tablespoons vegetable oil

1 onion, chopped

2 teaspoons cumin seeds, crushed

2 cloves garlic, sliced

350g. cauliflower florets

½ teaspoon ground turmeric

150g.fresh spinach leaves

 

DIRECTIONS

 

  1. Heat the oil in a large frying pan; add the onion and sauté for 4 minutes or until tender.
  2. Add the garlic, cauliflower, cumin seeds and turmeric. Then sauté for 1 minute.
  3. Add 200ml. water, cover and simmer for 5 minutes or until the cauliflower is tender.
  4. Add the spinach, stir well and simmer for a further 2 minutes or until tender and wilted.
  5. Season to taste and serve.
