Courgette Humus

 

INGREDIENTS

 

1 tin of chickpeas, drained and rinsed

1 green courgette, chopped

1 clove garlic, chopped

Small bunch parsley, chopped

Small bunch basil, chopped

Salt and freshly ground pepper

4 tbsp olive oil

Squeeze of fresh lemon juice

   

 

DIRECTIONS

 

  1. Combine all the ingredients in a food processor and pulse until desired consistency is reached.
  2. Serve with pitta, tortillas or crudités for dipping.
